Vegetarian Tacos!

Wow...has it ever!  I've done Les Mills Pump and am about to start the Ultimate Reset!   I will be documenting the entire journey when I start next week.  I can't wait!   Still working hard, vacations and having a rambunctious toddler have made things a bit difficult.  Part of life is working around that though.  :)   Finding healthy foods for toddlers and mom hasn't been too hard.  What has been hard has my decision to become 90% vegetarian.  I say 90% because sometimes I do still want meat.   One of the dishes I made were vegetarian tacos.  They were surprisingly good and very filling!   I do not like vegetables but I made sure to use my chopper to chop them up into very tiny pieces.  :)

1 bell pepper
1 jalapeno
1 small onion
1-2 cloves garlic
1 TBS olive oil
1 can garbonzo beans
3 - 4 TBS salsa
taco seasoning packet
Tortilla shells

Head oil in skillet over medium heat. Chop bell pepper, jalapeno, onion and garlic. Toss them in the skillet. After a few minutes add the taco seasoning, garbanzo beans, and salsa. (I found this a little thick so I added about 1/4 C water) Heat thoroughly and serve with your choice of toppings.


I topped it with a little bit of cheese.  I'm a plane jane and don't care for sour cream, avocado, tomatoes.....so this is what I ate.  Super yummy and super filling!   I think next time I may add some carrots and zucchini in.  I also may mash the garbanzo beans as they liked to roll away from my son.  If you try it, comment below what you thought.  I'd love to know!
